CCC graduation

Yesterday Chris graduated from the captains career course at fort Benning!!! So proud of him. Now just a week and half before we start our journey to Tacoma!

Girls Beach Trip

Our first annual girls beach trip was a total success!!! We had so much fun. It is truly such a blessing to still have these girls in my life. We can go months without seeing each other, but the second we get together its like no time has passed at all! The girls all got there Wed. afternoon, but unfortunately i wasnt able to make it till around 8pm. We decided to stay in and just catch up.

Thursday, I did the unthinkable.... I woke up early to run.... and by run i mean jog/walk. On the way back to the condo we stopped for coffee. I made ashlee take picture to document this occassion. Working out on vacation was always a big no go for me until now.

After, we packed up the cooler and headed to the beach! The weather was gorgeous the whole time we were there!
Thursday night we decided to go to McGuire's Irish Pub for dinner/drinks. Primarily because we saw an airplane banner saying ladies drink free.... couldn't pass it up!

Friday we started the day heading to Alvin Island to get airbrush tanks to remember the trip with. Dont ask how, but my tank was the only one to come out correctly. We had every intention of going back to get the others fixed, but that never happened.


That night we headed to Baytown to get dinner at Acme Oyster house. Seriously so delicious.

Saturday we got to meet up with the Clothiers at AJs!!

Overall, the trip was amazing. So good to spend so much quality time with my girls. A majorty of the pics are on Ashlee's camera so I'll add more when I get those :) Cant wait for next years trip!

Workout Wednesday

I've got to say, I did pretty well this week! Knowing I'm about to spend the next 5 days at the beach sure got me going.

Here's the latest workout routine I found. I went through it twice and my thighs were shaking! Be sure you take it slow and really concentrate on each movement.

I packed something in my suitcase for this trip that I normally NEVER do... Tennis shoes and workout clothes!  Ashlee and I have promised each other we would go run every morning. Regardless if it really happens or not, I'm proud of myself for even packing it all. Only 2 more hours till my girls weekend starts!!

Tasty Tuna Burgers

Whats on the menu tonight?

Tuna burgers!! This is one of our staple go to meals and super easy to make! This is a recipe I adapted from Allrecipes.com. 

Tuna, egg, bread crumbs, greek yogurt, onion, red pepper, jalapeno, dill weed, siracha, s&p

Mix all ingredients


Form patties and refrigerate for 30 minutes - makes them easier to handle

heat evoo in pan and cook 3-4 minutes each side



For the sauce: mix yogurt ranch and siracha.



DELICIOUS!!!!


Tasty Tuna Burgers
adapted from- allrecipes.com

1 6oz can of tuna
1 egg
1/2 cup Italian bread crumbs (of course panko always works best)
1/3 cup onion
1/4 cup red pepper
1/2-1 jalapeno (depending on how hot you want them)
1/4 cup non fat greek yogurt
2 tbsp siracha
1/2 tsp dill weed
1/4 tsp salt
1/8 tsp pepper
dash of hot sauce

Work out Wednesday

I'm not proud of myself. I totally slacked all last week. It was bad- that pure bare class I was going to take Saturday in Atl was full and each morning the though of sleeping in trumped the though of getting toned. The only working out I did Saturday was walking around Atlantic Station shopping- sorry Chris ;). For someone going to the beach next week you would think I would get it together. Well I have bounced back. Monday and Tuesday morning the thought of being on the beach soon got me up early and to the gym. Ashlee and I have even decided to bring out workout clothes and run together in the morning while we are in Destin. Chances are we will be the first ones up anyways since somehow we just naturally always wake up by 7 at the latest!

So what workouts have I been keen on? Here's a good one I found on pintrest that you can easily do at home!
Now whether or not it really burns 1,000 calories I'm not sure, but I do know I was sore the next day! I like to switch up the types of crunches and squats I do. Sometime adding a plank and lunges instead. I also alternate between girl pushups, incline pushups, and tricep dips. The total time it takes to complete is about 30-40 minutes. Celebrating the soon to be Mrs. Kopsie!

Some of our good friends from El Paso are getting hitched in just a few short weeks! 19 days to be exact!Courtney and Josh lived just right up the road from us in El Paso and we always had so much fun making the most of our time there, which meant lots of themed parties! This weekend Courtney was having some showers in her hometown of  McDonough, GA- just outside of ATL. I hadn't seen court since LAST July so  I was excited to be so close that it was super easy for me to be able to go and help her celebrate this wonderful time!

Saturday, Courtney's  newlywed sister Christine hosted a lingerie shower at her home!  It was such a blast. Courneys grandmother is a hoot and had us all laughing the whole time! She even won the game we played and got a $25 gift card to Victoria Secrets! too cute.

Sunday the shower was at Courtney's dads home... which is seriously SO Gorgeous! Since the couple is living in El Paso, it was a fiesta theme, which truely is more like being in Mexico than in the States anyways!

While us girls were celebrating, our boys were off deep sea fishing in Galveston. Checkout the 8ft Tiger Shark they caught (then ate)...
