weekend wrap-up and asparagus soup recipe

We spent the weekend just like Chester here...



LAZY LAZY LAZY! It was nice to not have any plans after a crazy week and half of traveling. I was more than content to sit on my couch while I watched my Rebels WIN the Compass Bowl!! HOTTY TODDY. I did do 3 productive things this weekend, however.

1. Took down the Christmas decorations.
the apt feels so bare now without them
2. Went to the Hub for breakfast pizza.
eggs, bacon, Parmesan, and mozzarella. DELICIOUS
3. Made asparagus soup!
This soup is by far one of my favorites. Its from Emeril Lagasse- recipe here. I do make one healthy change!

  • 3 pounds fresh asparagus, rinsed
  • 8 cups chicken stock
  • 4 tablespoons unsalted butter
  • 1 cup minced shallots
  • 1 cup minced leeks, whites only, well rinsed
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/2 cup fat free evaporated milk** (healthy change)


bring stock to a boil- add asparagus stalks and simmer 30 minutes- remove stalks and reserve stock
remove stems, cut asparagus in half. 


melt butter, saute shallots and leeks 2 minutes, add garlic 1 minute, add asparagus 3 minutes
add reserved stock and let simmer for 20 minutes

use an immersion blender (or regular blender) to puree - then add evaporated milk and stir

DELICIOUS asparagus soup!
